Ingredients:
<\/strong> \u25aa 1\u00a0tablespoon\u00a0extra-virgin olive oil
\u25aa 1\u00a0c.chopped yellow onions
\u25aa 3\u00a0garlic cloves,\u00a0smashed
\u25aa 2\u00a0c. chopped carrots
\u25aa 1\u00bd\u00a0tsp.\u00a0grated fresh ginger
\u25aa 3 c. \u00a0vegetable broth
\u25aa Salt to taste
\u25aa dollops of\u00a0sour cream optional<\/p>\n\n\n\n

Instructions:
<\/strong> Heat the olive oil in a large pot over low heat. Add the onions and 2 pinches of salt. Cover and simmer for about 5 minutes, until transparent. Add the smashed garlic cloves and carrots to the pot and cook on low for 5 minutes, stirring occasionally.
Stir in the ginger. Add broth. Reduce to a simmer and cook until the carrots are soft, about 30 minutes. Let cool slightly and transfer to a blender. Blend until smooth.
Return to clean pot, bring to simmer, taste and adjust seasonings. Serve with a a dollop of sour cream if desired.<\/p>\n\n\n\n
